    Recipes

    Here is my red beans and rice recipe:

    1 pkg. dried small red beans or kidney beans
    1 can Ro-tel tomatoes (I use the cheapest brand)
    1 large onion
    3 cloves garlic, minced
    Dash worcestershire sauce
    1/2 c. wine
    Tony Chacere's seasoning to taste
    Black pepper to taste
    Cayenne pepper to taste
    1 lb. Hillshire farm beef sausage (or whatever is on sale!)

    Soak beans overnight in large crockpot. Add remaining ingredients. Cook on high for at least 8 hours. Mash two large serving spoonfuls of beans and add to mixture to thicken. Add sausage.

    Serve over boiled white or brown rice. I serve this with French bread and sometimes a salad. Also red wine if I have it.

    This freezes well.

    I have a smoked turkey sausage in fridge and some red beans in pantry; I'll toss in some home canned tomatoes with peppers and that will be tomorrow's dinner in a crockpot waiting when we get home from a trip to the beach. Put the girls to making up some cornbread on the grill (cast iron pan that was my great-grandma's) and no heating up the kitchen. And in the budget! Love the idea!

        sounds wierd but this casserole is really tasty. it's very popular in the south.

        Chicken Spaghetti

        1 lb. boneless, skinless chicken breasts
        1 lb. angel hair pasta
        1 can Cream of Chicken Soup (or cream of mushroom)
        1 lb. processed cheese (velveeta)
        1 can rotel tomatos

        -Boil chicken breasts in large pot of water with a dash of salt
        -when chicken is done, remove and boil noodles in remaining broth, drain when done
        -cut chicken and cheese into small cubes
        -melt cheese in sauce pan
        -combine all ingredients in large pan, mix well and serve

        it's good with dinner rolls and my pineapple salad recipe (iceberg lettuce, shredded cheddar cheese, chunk pinapple drained from a can, and a spoonful or two of mayo mixed altogether)

        serves 4-5

          I forgot about the chicken spaghetti! That was one of the first things I fixed for my husband when we were dating. Here's another fast and fairly cheap recipe:

          Chicken Casserole
          2 c. cooked or canned chicken (I use whatever is on hand or on sale)
          1 can cheap brand cream of mushroom soup
          1 can cream of chicken soup
          1 soup can Minute Rice (I use the store brand)
          1 soup can water
          1 can fried onion rings
          Black pepper to taste
          Tarragon to taste
          Sometimes I will throw in a can of mushrooms and/or artichokes if I have them.

          Place all ingredients in large microwaveable dish. Cook covered on high for 10 minutes. Serve with green or fruit salad and French bread.
