I filed a Chap 7 emergency with a few creditors on my matrix. They were not accurate in that I wa in a hurry and just threw some names down. I filed a motion to convert my 7 a Chap 13 today and I filled the rest of the schedules required by the Chap 13 petition to meet the 15 day rule. In doing so, I also added a bunch of new creditors which I will have to send the 341 mtg notices to and pay a $26 amendment fee to the clerk. But on the form I was given, it only mentions adding creditors. How do you go about deleting creditors from the petition?..

Well, do you owe money to this creditor or not, you are required to list ALL creditors.
I think all you can do is amend your creditor matrix but provide them with a "completely new" matrix that lists all your creditors exept the one you want to delete. Did you provide them with a diskette, if so, you can provide them with a new diskette that list all your creditors except the one you want to delete.
