Where can you safely save money in a chapter 13 plan

I notice quite a few people on here say they are saving money in their Chapter 13. If you are fortunate to be able to save $500 to $1000 per month. Can you trust that creditors/ trustee are not interested in seeing your bank account. Also in the bank wouldn't it draw interest thus you have to show it on your tax returns. What are some alternative places to save? Thanks
