I had to submit 3 months worth of bank statements and canceled checks. It was a LOT of paper to submit. I have no idea whether they actually reviewed the information. I also had to submit a detailed list and explanation as to how we spent our tax refund. I was worried that they would question a couple of those entries, such as summer camp fee for kids and clothing that was DESPERATELY needed for kids. But the Trustee didn't bring it up.
I didn't use a paralegal service - I used an attorney. However, you needn't be worried about your meeting with the paralegal, that is the person YOU hired to file the paperwork. They are working for you. Just be sure to ask as many questions as you can while you are there with them. Plus, don't sweat the Trustee meeting. Just send them everything they ask for before your 341 meeting ... even if it is a pain to pull the paperwork together, answer all their questions honestly and you'll do fine.
