does the 341 meeting require receipts or proofs of expenditures? Like rent, auto insurance, gas for the car, or ultilities? Do they need to see the contract of the apartment/house rental, or a copy of the check for the rental?

Mine didn't. You are under oath to answer the trustee's questions. But the trustee in our case asked a lot of people to get him a market analysis of their home at the 341. Also, be sure to bring a copy of your petition, ID and SS card.

Groceries are out of this world! I spend $225-$250 a month at Costco, and each week I spend $125-$175 at Food4Less. Just a year or so ago, my food budget was $200 for costco (and I would have to buy extra things to get to that $200), and weekly it was $90. I also started shopping at Walmart for things like cereal, napkins & toilet paper, and spend another $75 a month there! It's just out of control here. Things keep going up and up, well.. everything that is except my husbands income.
