Why do we have to go through two different trustees? Why can't we just "have it out" at the 341 meeting and be done with it? Can't take much more of this stress.

Why do you ask? Do you think you will have to visit the US Trustee? Your chapter 7 trustee reviews your petition and attempts to collect non-exempt assets you may have at the 341. The US Trustee oversees the process and determines if your expenses are in line with the IRS standards. If your "reasonable" expenses are "unreasonable" according to the IRS standards then the UST will probably want to meet with you to ask why a particular expense is what it is. If they feel that it's unreasonable like a big apartment with a high rent that only 1 or 2 people live in then they would file a motion with the court to either dismiss your case or convert it to a chapter 13. Post Oct 17 law now has you doing a means test which will determine what the UST has been doing.
If your expenses are considered "normal" and "reasonable" then you won't have to meet the 2nd trustee and could relax a bit more.
