I love my crockpot! I use it all the time to make red beans and rice--I have a great recipe if you are interested. It also makes a mean pot roast. I buy whatever is on sale and add my own seasonings--whatever is in the cupboard that would taste good on a roast. Add potatoes and carrots and it's a meal. I have a good ground beef and noodles recipe, too. Most all of my recipes are kid-friendly. Thankfully, I have a husband who will eat just about anything and is grateful. I shop specials and plan menus accordingly.

here is another recipe, inexpensive, easy and quite tasty.
they're americanized chicken enchiladas deemed Mandiladas (after me) by my friends because they're my specialty. kids LOVE EM!
this recipe feeds 5-7
you need:
3 chicken breasts
2 packets of cream cheese
1 can of chopped chilis
1 package of 15-20 flour tortillas (medium size, i think they're called soft taco size)
16oz shredded monterey-jack cheese
half-and-half
foil
-first boil the chicken breasts until they're cooked and then shred them with a fork.
-next you'll soften the cream cheese and mix it with the chicken along with the chilis (drain the chili juice)
-now just fill each tortilla w/about 1-2 spoonfuls of the chicken filling. roll up the toritillas and place them side by side in a glass backing dish (you may need more than 1 dish depending on how big your dish is or how many tortillas you fill up)
-next you need to pour the half-and-half over and under the tortillas. make sure it gets under them because this will prevent them from sticking to the pan while in the oven. the amount you use will depend on your pan size, don't use too much though or the tortillas will come out soggy.
-cover the dish with foil and bake at 350 for 45 minutes. after 45 minutes sprinkle the shredded cheese over the mandiladas. use all of the cheese. bake for another 10-15 mins or until the cheese is melted.
Ok, so I've had a crap day. I tell hubby "we're going out to eat" then I decide, no I'll just make ribs, they are easy. I open the package I bought yesterday and they reek, like rotten eggs. I threw the recipt away and the garbage man came today. So, there went $6(they were on sale) and we're back to going out.
This forum is a great resource and I don't know of anyone who couldn't use help with their budget, especially when feeding and caring for a family. I also love getting new recipes particularly those that are easy and economical.
You are so right, Minny! I went to the grocery store today at lunch, but only after grabbing a kid's meal at a burger place. We have a certain amount budgeted for eating out (albeit a very conservative amount). It did help, also the fact I was on my lunch hour and knew I couldn't be late getting back to work.
I'm planning to make the Mandiladas this weekend. My family LOVES anything Mexican. Will let you know how it turns out.
