I am looking to lien strip my 2nd and 3rd. Is it likely that the 2nd and 3rd will challenge an appraisal if is just below what you owe on the first?

No, it is not likely. Depending on where you are (what District), your attorney may be able to do this by stipulation or by negative noticing, meaning there's not even a hearing on the matter.
